Recipe 1: Vegan Broccoli Almond Soup by Vegan First and Sofit
Ingredients:
¼ cup Sofit Almond Drink
2 Tbsp olive oil
1/8 tsp red chili flakes
1 large onion, chopped
4-5 cloves of garlic, chopped
1 cup of water
¾ tsp salt
15 almonds, blanched and peeled
2 cups of broccoli florets
8-10 spinach leaves
1/3-1/2 cup water
Method:
Step 1. In a pot, heat olive oil, a pinch of chilli flakes.
Step 2. Add chopped onions into the pot.
Step 3. Add in the chopped garlic. Sautee them for a couple of minutes.
Step 4. Now add almonds along with 1 cup of hot water and salt to it.
Step 5. Let it come to a boil, then add broccoli florets
Step 6. Cook them till broccoli becomes tender
Step 7. Now turn off the heat and let it cool for 10 minutes.
Step 8. Once it’s cool, transfer it to a high speed blender along with Sofit Almond drink, 8-10 spinach leaves, and half a cup of water.
Step 9. Serve it chilled or warm – this Broccoli Almond Soup tastes amazing either way.
Recipe 2: Vegan Millet Phirni by Vegan First and Sofit
Ingredients:
Sofit Soya Kesar-Pista flavored drink
1/3 cup barnyard millet
2 Tbsp powdered sugar
2 cardamom pods
10-12 strands of saffron
3 Tbsp water
Sliced pistachios and almonds
Method:
Step 1. Coarsely grind 1/3 cup barnyard millet and set aside.
Step 2. When it comes to a simmer, gradually stir in the ground millets.
Step 3. While the millet cooks, finely grind 2 cardamom pods
Step 4. Gently heat 10-12 strands of saffron.
Step 5. Add 3 Tbsp warm water to this crumbled saffron and set aside.
Step 6. Now once the millets have cooked, turn off the flame.
Step 7. Add 2 Tbsp of powdered sugar, the saffron water along with the crushed cardamom. Stir well.
Step 8. Add another ½ cup of @Sofit Soya Kesar Pista flavored drink, mix well and set aside to cool.
Step 9. Serve chilled or warm!
