Not fond of beans? Try it in a different way, the one our chef suggests. But before we share the recipe with you, you ought to know a little more about the term 'Poriyal'.
'Poriyal' refers to dry curries prepared in Tamil Nadu, and are an integral part of a Tamilian Thali meal. It can be made both plain and with a special seasoning of urad dal and mustard.
Amit Naithani of Amreli shares with us the recipe of Beans Poriyal. It is quick and can add the much-needed South Indian flavor to your meal.
Ingredients:
French Beans: 400 gms
Coconut Oil: 60 ml
Mustard Seed: 12 gms
Garlic: 20 gms
Ginger: 20 gms
Green Chili: 10 gms
Turmeric: 5 gms
Moong Dal: 15 gms
Coconut Grated Fresh: 90 gms
Salt: 5 gms
Red Chili Whole: 5 gms
Chef's recipe:
Step 1: Wash and clean French beans (String the beans)
Step 2: Grate fresh coconut with coconut grater
Step 3: Chop French beans into small dices
Step 4: Blanch French Beans in salt and turmeric water.
Step 5: In a frying pan, heat coconut oil, add mustard seeds and red chilli whole, when its starts crackling, add chopped garlic and ginger, sauté them. Next, add chopped green chilli
Step 6: Add boiled moong dal and grated coconut, mix well.
Step 7: Add blanched French beans and coat nicely in the pan (add water if required)
Step 8: Finish with freshly grated coconut
Step 9: Garnish with Red chilli whole and freshly grated coconut
Step 10: Serve hot with steamed rice and Malabari paratha
