Summers have finally crept into our homes and so does the need for refreshing drinks to stay cool and hydrated. We can make a variety of juices at our homes from fruits. But have you ever had a juice made from rice? Kochchakki, also known as red rice in Karnataka, is used for making juice at home. It reduces the temperature and cools the body, making it the best juice for summer. It is easy to make at home and requires minimal ingredients. Let us take a look at the recipe. To prepare, you need Kochchakki rice, ghee and cardamom.
To do this, first, take three spoons of Kochchakki rice and pour it into the pan. After stirring it for a few minutes, let it cool down for a while before putting it in the mixer. Add a half cup of ghee to it followed by jaggery and cardamom. Grind it until it becomes thick. Now, take a muslin white cloth and cover it above the bow. Pour the paste into the cloth and cover it in an oval shape. Now squeeze the juice in the big container. After extracting the juice from the paste, pour it into the glass. You can drink it with dosa or any other beverage. You can also add salt as per your taste. It can be kept in the freezer and consumed after some time. Drinking homemade juice is better for the body if compared to other juices.

You can also make Kochchakki roti with the help of Besan, Onion, Carrot, curry leaves, Coriander leaves, salt, Jeera and red chilli powder. Soak the red rice overnight. Grind it until it becomes a paste. Add 1/4 cup of water before grinding it. Take the paste in the bowl and add besan, red chilli powder, chopped vegetables and salt. Mix it well. After converting it into a dough make spherical rotis. Fry it in the pan. You can eat it with green chutney or pickle.
