Snacking is often slammed by nutritionists and health advisers. On the contrary, this habit may help reduce your intake of food during lunch or dinner hours and also give you energy if you are in a job that requires physical activity (just ensure you don’t open packaged chips and oily fries!) Golden fried salmon sandwiches make for a quick snack and can be served along with crisp salad or green vegetables. Ingredients: (for 4)16 slices white bread4 tsp unsalted butter1 tin of red salmon3 tsp cream cheese1 tsp grated cheddar cheese1 egg1tsp milkPaprikaVegetable oil for fryingSalt and black pepperUsing a scone cutter, cut 16 circles from the bread and butter each circle. Drain the salmon and remove any skin and bone. Mash the flesh with a fork, stir in the cream cheese and grated cheese. Season with pepper and salt and spread the mixture thickly on half the bread circles, top with remaining slices and sandwich firmly together. Beat together the milk and egg. Season with paprika, salt and pepper, Dip the sandwiches in the beaten egg and fry them in hot oil until crisp and golden brown. Drain on crumpled kitchen paper and serve with lime wedges. (Do not use newspaper to drain the sandwiches)
